Cabbage Diet Soup May Help Prevent Cancer, Korean Study Cited
A recent study conducted by The Department of Preventative Medicine at Hengyang University in Korea studied 136 patients diagnosed with stomach cancer. They compared their diets with the diets of 136 healthy patients.
Here are the comparisons:
· Grilled beef
· Radish kimchi (pickled vegetable)
· Salty stew made with Pollack (ocean fish)
· Soybean milk
· kimchi, Cabbage Diet Soup
Koreans love kimchi. It is a lightly pickled vegetable dish that is eaten with every meal even breakfast. This dish can be made with a number of different vegetables including radishes, turnips, cucumbers, perilla leaves and cabbage. Researchers have found a special link between kimchi made with cabbage though. It has been shown to have a cancer-protective effect on the stomach.
How the Cabbage Diet Soup Works to Protect the Stomach
The Cabbage Diet Soup works by providing a group of helpful chemicals known as glucosinolates. These chemicals have an effect on how the liver functions. They prevent the liver from turning carcinogenic compounds into harmful forms of compounds that can cause cancer. The key to keeping as many of the glucosinolates in the cabbage diet soup is the cooking. The more you cook the cabbage the more these chemicals will be lost. Only cooking the cabbage for about 2 minutes will destroy about 50% of them. So, cook the broth of the soup first and then at the very end of the process drop the cabbage in for only a couple of minutes.
Additional Benefits of Cabbage Soup
Cabbage has an additional benefit when it is cooked as described above. It contains a lot of fiber. Fiber has an additional anti-cancer characteristic. The liver expels estrogen and testosterone in the bile salts. The fiber in cabbage catches this bile and expels it with the stool instead of allowing it to return to the bloodstream. This prevents potentially harmful hormones from causing harm to the body. It has also been shown to help prevent breast cancer.
Best Way to Cook Cabbage Diet Soup
Cook your soup stock ahead of time. After it is boiling and just about ready, you can put in the cabbage. Do not boil the cabbage at a high heat. Lower the heat and let the cabbage heat up for 2 or 3 minutes. You can even turn the heat off and put a lid on the pot to let the cabbage steam for 2 or 3 minutes. Never cook the cabbage for more than 2 or 3 minutes. You can cook the soup ahead of time and just add the cabbage and heat in the microwave for 2 minutes. The idea is not to cook out all the nutrients in the cabbage.
